Chicken Fajitas with Lettuce

A delicious, healthy recipe for the whole family!


  • 4 chicken breast
  • 1 red / 1 yellow / 1 green pepper
  • 1 red onion
  • 1 bunch of coriander
  • a pack of fajita seasoning
  • 1 head of iceberg lettuce
  • salt and pepper to taste
  • some veg or sunflower oil for frying
  • sour cream or guacamole (optional)
  • 1 lime for juicing



Cut the lettuce into quarters and remove from the middle/stem, and set aside. Thinly slice the red onion, slice and de-seed the peppers, and slice the chicken breast nice and thick then set aside.


Start to warm a wide frying pan - add a drizzle of oil and start to fry the chicken. Once the chicken is sealed on the outside - add the peppers to the pan. Fry until the chicken is cooked thoroughly. Once cooked, add the seasoning a teaspoon until desired heat is reached. Remove the heat and place in a bowl and drizzle with the lime juice.

For serving

Place the cooked chicken in the centre of a lettuce leaf. Add a little red onion and roughly chopped coriander. Add sour cream to soften the heat if spicy or guacamole for even more flavour!
